At Le Maquis, pleasures abound and our Establishment would not be what it is without its gourmet restaurant L’Arbousier, a short distance from Ajaccio, which offers the ideal place for savouring Corsican inspired Mediterranean cuisine with produce from the sea and seasonal aromas.
From autumn through to spring, our gourmet cuisine is served beneath the ancient beams in the welcoming and hushed dining room, then with the first few days of fine weather, the restaurant moves to the large terrace at the poolside.
Our à la carte and set menus
For dinner, our restaurant offers its gourmet menu from the sea and seasonal aromas as well as its daytime menu (suggestions inspired by market produce, at lunchtime only), for €90 per person, excluding drinks.
Our waiting staff will also be delighted to present the grill menu with Corsican and Mediterranean inspiration for a relaxed lunch on the terrace overlooking the sea and at the poolside.

Our waiting staff inform you about our opening times: every day from midday to 1.45 pm and from 8 pm to 9.30 pm.
They will introduce you to a gastronomy filled with the colours of the sun
in which fish and Corsican specialities take pride of place, served by a young and dynamic team in a relaxed and elegant ambience.
In the middle of the day, the terrace offers sunbathers and sailors passing through a restful haven in the shade of the parasols for an easy-going lunch. The grill menu will delight all tastes with its fresh and light suggestions.
Then comes the magical moment when the terrace puts on its evening dress as the sun dips into the sea and the blue is replaced by the pink and later the vivid red of the sunset. Imagine savouring a glass of Champagne as you watch this display just before a romantic candlelit dinner. Lulled by the sound of the nearby waves, every evening, lamps light up the tables, small sparks of happiness to accompany the profusion of perfumes and the joyful conversations that ascend to the stars.
Bar and terrace
Bar, lounges and fireplace: a hushed setting, an intimate atmosphere, the feeling of being at home and, by the fireside, savouring our selection of teas, a glass of Champagne, or a cocktail with friends. The perfect place for endless conversations!
But, in everyone’s minds, the masterpiece is, above all, the magnificent terrace overlooking the hotel’s cove. It oscillates between the blues of the sea, the pool and the sky and the red tones of the setting sun, in the morning for a peaceful breakfast through to evening for a drink lulled by the sound of the waves.
Every day, Corsica of the sea,
the season, the land, the maquis and the forest floor play with the Chef’s imagination. In the kitchen, the culinary score is played by Gérard Lorenzoni.
Of Mediterranean and Corsican inspiration, his à la carte and set menus play with good humour and freshness. His simple and light cuisine - exactly what you dream of in the southern heat, is that of good produce, of markets: freshly picked vegetables, fish - red mullet, dentex, spider crab, and crayfish - caught at night, goat, suckling lamb, veal, game or wild pig. Another way of entering into the most aromatic country in the world!
“Here, honey has the taste of the arbouse berry, the wild pigs that of myrtle, and flour the sweetness of chestnut”, Gérard Lorenzoni will tell you this through his subtle work with the best produce in the region strictly selected for its freshness and taste, on a constant search for a new take on tradition.
Corsica is a mountain with its feet in the water and its cuisine is in its image:
it has character. But above all, it is about civilising a tradition and cutting back on the past. Thus, free of all unnecessary fat, thick cut of mountain pork on mashed potatoes, roasted rack of lamb from Bastelicaccia with rosemary and tianu of artichoke with pancetta compete with fried fillet of dentex and grilled capon, and melenzana stuffed with bruccio.
And the desserts should not be overlooked: the different chocolate textures rival the delicate apple tart or the strawberry variation.
Dining with plenty of character that moves from the earth to the sea following the tastes of the season: this is what L’Arbousier is all about, allowing you to enjoy some unforgettable moments.
The cooler temperatures of our shaded terrace are a contrast
to the gentle sleepiness of the beach which it dominates and offers the impression of flowing into the sea, overhanging the vivid blue waters and the infinite view of the gulf, guarded by the Sanguinaires Islands on the distant horizon.
For a peaceful breakfast, a relaxed lunch, or a romantic dinner lulled by the gentle sound of the waves, it feels as if hospitality was created here, at the meeting point between tranquillity, gentle breezes and waking dreams.
In this enchanting setting, watch the delicate ballet of our waiting staff who, for almost 33 years, have offered an extremely pleasant service that has been personalised to the extreme.
Dress code
We recommend a relaxed attire during the day. A more stylish attire is appreciated in the evening at the bar and at the restaurant. A jacket and tie are not compulsory for dinner, but gentlemen are asked to wear trousers. We thank you for your understanding and your elegance
Your children’s meals
We offer a large selection of menus devised especially for children and served in rooms from 6.15 pm. They should be ordered before 3 pm on the same day. We are also able to warm feeding bottles and ready-made meals.
